What's the difference between serger thread and sewing thread?

These varigated serger threads are good quality with lots on a cone. It's got a nice selection of colours, but I would prefer that the colour changes within the varigation would transition more slowly/subtly. I mainly use these as a colourful topstitch, or underside to a coverstitch and I'd prefer the colours didn't change so abruptly every inch or so.
